6 Step Zucchini Bread

There’s a lot of Zucchini Bread recipes online but after trying different ones, this is the best so far!
I found it on Pinterest when I typed in zucchini and applesauce. I had a container of applesauce I was trying to get rid of.
This is best kept wrapped in foil inside the fridge once it cools off completely. Unless your family eats it quickly, then no need to worry about that! I don’t really like cold bread but for some reason this loaf does taste even better when it has been cooling in the refrigerator.

Can I go so far to say this could be healthy? It does have somewhat of a vegetable in it. Probably not, but hey whatever makes you feel better.
There are a lot of ingredients but this comes together very quickly.

Ingredients Needed:

  • 1 1/2 cups of flour
  • 1/2 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of cinnamon, and extra for coating pan
  • 1 cup of granulated sugar, and extra for coating pan
  • 1/4 cup of light brown sugar
  • 1/2 cup of Natural Applesauce
  • 1/3 cup of olive oil, (not pictured)
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 medium-size Zucchini, about 1 and a half cup
  • 9×5-inch loaf pan
  • Olive oil spray
  • Some good jams playing in the background

***Turn oven on to 350 degrees.***

  1. Get your ingredients out. Spray the pan with olive oil and coat all around with granulated sugar and cinnamon.

2. Shred the zucchini in a bowl. You can use a grater, shredder, or food processor as well.

3. In the same bowl add granulated sugar, brown sugar, applesauce, olive oil, eggs, and vanilla. Whisk together.

4. In a separate bowl, combine the flour, baking powder, baking soda, salt, and cinnamon.

5. Gently add small amounts of the flour mixture into the wet mixture and stir just to combine. Do not over mix. Pour into loaf pan and sprinkle a bit more sugar and cinnamon on top of the batter.
This will create a crunchy texture all around the bread.

6. Put in oven and bake for 50 minutes.

the best part…

Look at that crunchy delicious loaf! This is a super easy bread to make. I suggest you grab a slice while it is still warm, spread some butter on there and get your grub on!
