HOT DAY FRUIT PIE

This is an extremely simple pie. At first, I thought, if I fail at making this, there is no hope for me… But, I kept craving something sweet, so I braved through it anyway.
It was about 104-degrees outside, so I rummaged around in my pantry and fridge. I thought all these ingredients will hit the spot!
Guess what? You do not need to turn the oven on for this! Hooray!

*Side note: Have you ever shouted “Hooray” out loud in your whole life?
I don’t think I have…If I text you LOL, I am laughing out loud though.
I keep it real like that…

So the graham cracker crust is not my own, it belongs to Bobby Flay. I use this crust recipe for many different pies, it is my fav! The original recipe is found at https://www.foodnetwork.com/recipes/bobby-flay/throwdown-pumpkin-pie-recipe-1949297. I have only baked this crust in the oven so that’s why I was a little nervous it would not hold up being cold. But it did!
I have not tried the pumpkin pie recipe that is on there but you’re welcome to. Not because I don’t like pumpkin, I love it! But that conversation is for another day and another recipe.


Ingredients Needed:

For the crust:

  • 1 1/2 cups of ground cracker crumbs
  • 6 tablespoons of melted butter
  • 1/4 cup of granulated sugar
  • 1/4 teaspoon of cinnamon
  • 9- inch deep pie plate

For the filling:

  • 16 oz container of strawberries, rinsed and chopped
  • 6 oz container of blueberries, rinsed
  • 20 oz can of pineapple slices
  • 7 oz jar of marshmallow creme, (only half of the jar will be used)
  • 1- 8 oz block of cream cheese, softened

Crust

  1. Put about 1 sleeve and a half of crackers into a Ziplock bag.
  2. Use a rolling pin to crush them into small crumbs.

3. Mix together the cinnamon, cracker crumbs, and sugar in the pie plate.

4. Melt the butter for 20-30 seconds in the microwave, pour it into the plate, and mix all the ingredients together.

It should look like the texture of sand when mixed.
Hmmm…That would be a sick joke to play on someone for April Fools.
What kind of crust is that? Oh, it’s a graham cracker crust. Then they get a mouth full of sand. Gross! Or is it funny? I don’t know.
Anyways…

5. Using the bottom of a glass cup, you will press the crust against the pie plate to make it firm.

6. Since it’s not going in the oven, it needs to set for about 1 hour inside the fridge to harden.
Look at that beautiful crust!

Pie Filling

pineapple, strawberries, blueberries, cream cheese, marshmallow creme

7. Put half of the jar of marshmallow creme and the block of cream cheese in a bowl.

8. Use a hand mixer to combine the ingredients until smooth.

9. Get the crust out of the fridge and spread the pie filling on top.

10. Dice up the strawberries. Get pineapple slices and blueberries together.

11. Spread the pineapple slices on the filling. Ain’t that pretty!

12. Spread the strawberries and blueberries on top.
Unfortunately that covers up the fancy design you just made. I guess that is the sacrifice we must make. No one would know there are pineapple slices under there!

13. Put in the fridge for another hour to set.
