Let’s see what I have here, a couple of bananas about to go bad, and a pantry full of cake mixes. (cuz you never know when your gonna need one.) Forget about banana bread, today it’s all about banana cake! This banana cake is filled with vanilla pudding and topped with cinnamon vanilla chocolate frosting! If you bake as often as I do then you probably have all these ingredients handy!
Ingredients Needed:
For the Cake:
- 1 cup of whole milk
- 1 cup of butter (2 sticks of butter) at room temperature
- 4 eggs
- 4 over-ripened bananas, peeled
- 1 box of yellow cake mix
- olive oil spray
- a 13 by 9-inch glass pan
- a metal strainer
For the Pudding:
- 3 cups of whole milk
- 1 (4.6 oz box) of cook and serve vanilla pudding mix
- 1 tablespoon of vanilla extract
- a pot
For the Frosting:
- 1 container of chocolate frosting
- 1 teaspoon of cinnamon
- 1 tablespoon of vanilla syrup ( I used Torani syrup)
- a hand mixer
***Turn the oven on to 350 degrees***
& Turn that radio up!
Let’s make the cake first! Get all the ingredients together. If the butter is cold, warm it inside the microwave for 30 seconds in a glass bowl.
1. Put the bananas in a bowl and mash them up with the bottom of a glass cup.
That’s what I’m talkin’ bout! Take your anger out on those bananas!
Bad bananas!
2. Add the eggs and milk into the bowl with the bananas and mix with a hand mixer.
3. Add the melted butter in there and mix it all up, scraping the sides of the bowl.
4. Using a metal strainer, put the powdered cake mix thru so there are no clumps. As you add the powdered cake mix, tap the side of the strainer with one hand as you hold it with the other.
5. Spray the glass pan with olive oil spray. Don’t hold back, be generous with it!
6. Pour the batter into the glass pan and put it in the oven. Set your timer for 25 minutes.
Every oven is different so I suggest you check on the cake periodically until it is golden brown on top and the edges are dark brown.
Let’s make the pudding!
7. While waiting for the cake, cook the pudding using the directions on the back of the box. (Use a whisk to stir it!)
***Note: The box says to use 3 cups of milk, but I had almost a whole cup left of pudding after I was done filling the cake with it. If you don’t mind having leftovers, then use 3 cups of milk. If you only want enough to fill the cake, then use 2 cups of milk.***
8. The directions on the back of the box are simple enough. Don’t use a rubber spatula like I did to stir it.
Use a whisk and then the pudding won’t come out as clumpy as mine did! Stir pudding mix with milk in a pot and bring to a boil on medium heat, stirring constantly.
Takes about 2 minutes once it starts boiling.
9. Add 1 tablespoon of vanilla extract as it comes to a boil.
It’s always good to add extra flavor when baking with boxed items.
Set aside the finished pudding, it will harden more as it cools.
Let’s make the frosting!
10. In a bowl, using a hand mixer, mix the whole container of chocolate frosting, 1 tablespoon of vanilla syrup, and 1 teaspoon of cinnamon together.
Let’s finish making this cake already! Geez!!! I’m getting hungry!
11. Take out the cake from the oven. The best way to check if it’s done is to use a toothpick inserted in the center. It should come out with very tiny crumbs on it.
Well, my hunger pains must wait, I’m sure I will survive. The cake needs to cool down at least for 30 mins…Baking takes a long time, doesn’t it?
It will be worth it!
Here we go again…
12. Now you want to make holes in the cake once it has cooled down. I used the back of a big plastic kitchen spoon.
Make the holes just close enough to the bottom but not all the way.
13. Take off the gross layer of fat that the pudding has on top of it from sitting there. Then stir it up.
Using a spoon put the pudding in all the holes in the cake and a thin layer of pudding on top when all holes are filled.
I know my pudding looks like Clumpszilla, but it tasted great! It didn’t effect the cake at all, the texture was not clumpy. So there!
14. Put the frosting in the microwave for 20 seconds then layer it on the cake. It will go on nice and smooth. You can use a rubber spatula to cover the whole cake with frosting.
Look at all the pudding, chocolate, and cake from the side. Lookin’ good!
the best part…
Cut a slice already and eat it! Don’t use a fork! Or a plate…or manners…I mean you have been waiting soooo long to eat!
Look at the pudding oozing out…yum…
